Why, or how, does OpenDNS block flash player and some html code?
Excite.com and some other pages do not load completely or correctly. I have some filtering in place but it is basic stuff. Why does this cause flash player or webpage wallpaper to no load completely?

There's no work around, only a way to make it right. OpenDNS as DNS service doesn't know about flashes, HTML code, web pages or any such objects, it only knows about domain names, and only this is what can be blocked with a DNS service.
That said, you need to find out what domains you have blocked where these objects are hosted on and to unblock them accordingly. You may want to check your domain stats or the HTML source of pages to find out. If this still does not help, you need to dive deeper into your DNS traffic, e.g. with http://www.nirsoft.net/utils/dns_query_sniffer.html or http://www.pyrenean.com/Filtering which both can real-time log/show your DNS traffic.
