What kind of OpenDNS service are you using? If you are using the free home service you do not get any stats for when a particular DNS lookup, or even the last lookup, to a particular domain was done. Instead you can get an aggregate count of all the lookups for a particular domain for the entire day. The only time based information you can get are graphs that show the total number of lookups by time, but not individual domains. In other words, if you are using a free account, your statement about activities when everyone is in bed is inaccurate.

Many websites reference multiple domains to display their content, not to mention the myriad of domains that are referenced by ads on so many websites, such as news, politics, sports etc. In addition the software on your computer, including antimalware software and browser plugins can generate a significant amount of DNS traffic while doing their routine duties.

Without seeing more specifics about the stats you are looking at, or more detailed knowledge about your network and the devices on it, it's more than likely that the traffic you are seeing is normal background traffic of browsing the internet as well as the software installed on those devices.
