Youtube for Schoolwork
Our kids need youtube for school, but that means 'Video sharing' has to be allowed. I had it blocked and added youtube.com to the whitelist but it didnt work. My goal is to not have youtube wide open which brings me to my 2nd question. If I have 'pornography' blocked for example, but youtube unblocked, does opendns know enough that if a video that fits that category is played, will it get blocked? Or will it be allowed because 'video sharing' is not blocked? Thanks

Porn is not legitimate on YouTube. And OpenDNS does not know anything. It just has domain names categorized.
Your better approach is to follow what has been provided by the providers themselves.

I did not expect that you still wanted your question answered.

If the domain is categorized as pornography, then it will be blocked, else not. The same statement is true for any other category.
You do not need a DNS server. The local hosts file is sufficient.
