To add domains to the whitelist, you visit the page where also the categories and levels like 'high' are listed.  Below that you select "Always allow" and enter the domain name.  You cannot add from the domain stats page, this does not work even if offered.

Think about, google.com already covers this and every subdomain like images.google.com or www.google.com.  Also, add only domains (or parent domains) which are actually blocked, else you fill up your 25 entries within no time.

Now to your first question about YouTube:
You must enter all YouTube domains (which are actually blocked) into the whitelist.  You find the domains being used by YouTube with a tool like this:
    https://www.webpagetest.org/result/200707_YZ_5f462fc0df48ff24c68ff4bc35b9aeee/1/domains/
These are only the domains being used at the frontpage - there could be more which you might pick with your blocked domain stats.

Thank you for your reply.  Is there a way to allow Youtube but not some content in youtube that has adult material / nudity etc?  Is this possible?

    Thank you
